ā Winemaker at Drouhin Wines
The House of Joseph Drouhin brings to the making of these wines its utmost care, in the respect of tradition. At the time of harvest, usually around mid-September, the grapes are hand-picked in small cases, then brought to the winery "en Chavet", in Beaune. The grapes are gently pressed. The juice settles down for few hours before going into oak barrels. Once the alcoholic and malolactic fermentations are completed, the wine is racked off its lees.
About the Estate:
Founded in 1880 by Joseph Drouhin, the House is one of the most famous in Burgundy. It has always been managed by family members. Heritage and skills are transmitted through generations. The cellars dating back to the 15th century are a unique place in Burgundy and are listed in the register of French Historical Monuments.
The House philosophy is to reveal the great "terroirs" of Burgundy. That is why the House Joseph Drouhin stays away from techniques that can damage the natural quality of the soil and the vine, and uses soft production methods and techniques.
